Some themes only provide a few options, while others provide a dazzling mess maze of options. And most themes provide only minimal options in the free version, but offer more customizability with a companion paid plugin.

Then accessibility support is by and large left to the theme’s author, so as you’d expect, different themes will vary wildly when it comes to accessibility.

Specifically for the GeneratePress theme, only the paid PREMIUM (ie paid) version supports editing the copyright message in Customizer. But, to their credit, the theme provides a whole lot of filters to easily and completely customize the theme (including changing the copyright text) via code.

In any case, I’ll recommend you ask questions relating to the GeneratePress theme in the theme’s own support forum, so its author and user community can help you: https://wordpress.org/support/theme/generatepress/
